I have a corn allergy as well as wheat, and most restaurants I go to carry Udi's as their GF option but I still can't eat them. I know corn costs are lower, but do you have any plans on replacing with potato/rice ingredients in the future?
If you are sensitive to corn itself, regrettably we don’t have many corn free products: the mold inhibitor, enzymes and xanthan gum we use are all produced from a corn medium. I know the bakery is aware of the market for corn free products, and would like to develop entirely corn free breads, but right now we can’t do without a few corn based ingredients. However our Granola and Granola Bars are corn-free!
